From celebrated Montreal cheesemaker Pierre-Yves Chaput
It is aged by Dépendances du Manoir of Brigham, Quebec, Canada.
The name is a misspelling of the French term for "scapegoat".
This creamy goat’s cheese is best eaten within hours of slicing,
preferably with a loaf of crusty muesli bread and a glass of sauvignon blanc.
The aged (up to eight months) version is a salty-sweet delight.
